Then Along Comes Pudding...

I love pudding- I always have. I used to BEG my mom to make me tapioca pudding- she would sometimes do it for me on Sunday nights. Happy memories! Something about that baby food texture- have I made that confession... that I sometimes eat my baby's baby food? Only the fruity flavors mind you, but truly I must have a mineral deficiency or something, I know... but there you have it. Anyway- pudding give me the same kind of satisfaction. This ended up being a wonderful use for some of our milk that was just about to expire- a great way to sweeten up and disguise it. :) Don't laugh, but I quadrupled that recipe- I didn't even know it could be done. I had to get the calculator out. :) Two cups is just never enough. Yes... it was intense. And I know it is a simple things, but I threw in some fresh blackberries and a pinch of cinnamon and it was just heavenly! But I guess, keep in mind this IS coming from a baby-food lover, so take it with a grain... or a bib. :)

Homemade Vanilla Pudding (

  • 2 cups milk
  • 1/2 cup white sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter


  1. In medium saucepan over medium heat, heat milk until bubbles form at edges. In a bowl, combine sugar, cornstarch and salt. Pour into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, stir in vanilla and butter. Pour into serving dishes. Chill before serving.

Mmmmm . . . I could seriously go for some homemade pudding right now. I usually just do chocolate, though, cuz the vanilla never works out for me the same. But the chocolate . . . TO DIE FOR!!!! Sheesh, Lydia, THANKS for the reminder! I have two weeks to go with this baby and really NEEDED a reason to EAT MORE YUMMY FOOD!!!! (Better now than after when I KNOW the weight isn't baby and have to kick it in high gear, right? . . . or something like that!)

And could you send some of those blackberries my way? I MISS the MASS AMOUNTS of berries available along every street up there, particularly in the Julietta/Kendrick area. Why are people NOT out picking them again?

You know it's hereditary, right? I used to buy jars of banana baby food in college so I could snack on them. And I probably eat more than my babies now . . . :) That looks like a good recipe! And I have some good old HH milk that is getting vergy . . .

Guess what I made last night? Chocolate pudding!!! But I substituted skim milk, Splenda, and Egg beaters. It turned out okay! I only did half splenda with half sugar and half egg beaters with half egg yokes. But we were DELIGHTED!!! ;-D Just wanted to share!

What a good idea!!! You are sure good at turning a sweet treat into something healthy. I'm so excited about that baby coming! Keep me posted!!! I can't believe it is already nearing that time!
