Chunky Guacamole

I watched a video clip of Ellie Krieger making this, and I just had to try it because it looked so fresh and good. I wasn't disappointed! It had a yummy taste- I really like onions, so it was fun to use them in a way that made the avocados go a little further (they can be a bit pricey!), but fresh onions can be pretty strong. My avocados were super ripe, so I ended up just mashing them, instead of dicing like she says to do. It was a really yummy snack though. I like watching her, she just inspires me to eat a little better and make things fresh. I'm trying! :)

Chunky Guacamole Ellie Krieger
2 firm-ripe avocados, diced (1 1/2 cups)
1/3 cup chopped red onion
1/4 cup fresh cilantro leaves, coarsely chopped
1 1/2 tablespoons fresh lime juice
Salt (to taste)

In a medium bowl, combine all the ingredients and toss gently to combine.

That sounds SO yummy. We'll have to try that. Soooo, I was wondering. I am working part time and don't have a lot of time to prep for dinners/meals most days. do you have any easy, quick meals where you literally just open things and mix them together and you have the meal? but that actually taste good? My husband is getting very sick of taco soup...

I hear you! It is hard to find time to cook even without a part time job, so I can just imagine that life is getting a little crazy. Hope that is going well. As far as easy prep meals (which is usually what I prefer!) I would first suggest the crockpot. You can usually just throw stuff in in the morning and you don't even have to fuss until you pull it out at dinner time- so worth the effort! OR, you might try some other soups- I too love taco soup, but not every night. :) Soups are pretty fast to throw together though- like that Kelbasa chili- you just open a few cans, or Easy Italian Stew. I also like to make a big meal, when I have time, and freeze half of it for those busy nights. (It is handy if you have a little extra freezer space.) My final suggestion would be to check the Kraft Foods website. They almost always have a good easy recipe, and you can just enter ingredients in- even if it is just a can of something. :) Anyway- I wish you luck with work and with putting a good meal on the table, and I will think about you in my cooking this next week or two and see if can "put a Lyd on it" and dedicate something to your "plight". :)

Yes I think the crockpot idea just might work. :) I'll keep checking back.
