Italian Zucchini Skillet

This was BY FAR the best way I have ever had zucchini! I came up with this one on my own, and not to brag :) but it was fabulous! I could eat zucchini every meal cooked up like this! Made a wonderful side dish!

Italian Zucchini Skillet
1 T olive oil
1 large zucchini, sliced
1 bell pepper, cut into strips or pieces (any color)
1-2 ripe tomatoes, sliced
1-2 tsp dry packet of Italian Dressing mix, unprepared You could probably use a prepared Italian Dressing, but this was really good
salt and pepper to taste
1 tsp Italian Seasoning
1/2 tsp dried basil

In a large skillet, simmer zucchini and peppers in olive oil and seasonings for about 5-10 minutes with the lid on. When they are softened, add tomatoes and dry dressing mix. Stir occasionally and simmer for a few more minutes. Serve warm.
