Cheesy Zucchini Skillet1 T. olive oil
2 T. water
1-2 medium zucchini's, sliced
1 cup grated cheese
1 tsp salt
1 tsp basil
1 tsp crushed cooked bacon
*Simmer zucchini in oil and water on medium heat. When it softens, sprinkle the rest of the ingredients on it, and simmer for a little bit longer.

Mmmmmmmmmmmmmmmmmmmmmmmmmmmmm! If the dratted squirrels hadn't eaten our zucchini down to the stem . . . I'll get a hold of some somehow, because I MUST HAVE SOME OF THAT!
