1 T. oil
1 onion chopped
3 cloves garlic, minced
2 tsp. cumin
1 tsp oregano or Italian seasoning
1/2 tsp cayenne pepper
30 oz. chicken broth
3 cups chicken breast cooked, chopped, and shredded
3-4 cans white beans drained
16 oz. grated cheese
1/2 cup sour cream
4 oz. cream cheese
1 (15 oz) can white kernel corn
In pan, heat oil over medium heat and soften onion and garlic. Add cumin, oregano, and cayenne pepper. Cook a few minutes. Add broth, chicken and 3 cans of beans. Add cheese until competely melted. Add sour cream, cream cheese and corn. Heat through and serve. Top with cheese and crushed bacon.
