Whole Wheat Peanut Butter Pancakes


I came across this great "healthy" recipe for pancakes here. The girls really liked it and I thought it was pretty good, too. We even topped it with home-made applesauce instead of syrup. I don't even think we had maple syrup in the house growing up. Mom would either make her own syrup, or we would use applesauce or blended pears (which are both surprisingly good!). I liked how filling these pancakes were! The seemed to stay with you a little longer to help curb the hunger or the "snack attacks." :)

Whole Wheat Peanut Butter Pancakes with Applesauce
    2 and 1/4 cups whole wheat flour
    1/4 cup brown sugar
    4 tsp. baking powder
    1/3 cup apple sauce
    2 tbsp. reduced fat peanut butter
    2 and 1/3 cups water

Mix all dry ingredients.
Add all wet ingredients and mix well with whisk or hand mixer.
Cook on hot griddle or in pan. If using teflon coated cooking surface, no oil is required. Otherwise, spray surface with cooking spray.

Enjoy with your favorite syrup.

Makes 8 servings. 1/2 cup of mix per pancake.

So this morning I asked Abby if she wanted breakfast, and it sounded like she said pancakes (though we eat pancakes once in a blue moon, so I know she really didn't). But that got me thinking, and I made these AMAZING pancakes. The kids GOBBLED them up, kept asking for more -- without any syrup or butter or any other extras. Next time, I think I'll spread a thin layer of peanut butter over the top when they're warm. PERFECT MEAL!!!

1/2 cup whole wheat flour
1/2 cup skim milk
1 T extra virgin olive oil 1 tsp. baking powder
1 medium banana
1 T brown sugar
1 egg
1/8 tsp. salt
1/2 tsp. vanilla
1/2 tsp. cinnamon
1/4 tsp. nutmeg
